Mutsumi convinced me to go back to Morimoto tonight for yet another round of her beloved uni carbonara. As I wanted something different, I asked the sushi chef if he had anything off menu. He said they had just gotten in a local Hawaiian fish called ‘moi’ he could slice up for me. So I went with it… and had the best pieces of sushi of the entire trip! I found the moi, which is also known as Threadfin, to be firm in texture, while fatty and buttery in taste, almost a cross between tai and toro. Simply fabulous!
If you ever see moi on a menu, order it!
